Q: What are the differences between this 20cm pan and the de buyer 5610.20 mineral b element 20cm pan? what do the numbers actually mean?

The first four digits is the product code and the last two represent the size. Carbone Plus is made from carbon steel and has a decent weight to it. Many professional chefs love it. Just slightly heavier is Mineral B, which is NOT the same material as the other respondent has advised - it is made from sheet iron. Great if you want a bit of weighty iron but find cast iron too heavy. There is also a lighter carbon steel range, but only suitable for moderate heat if you have induction. All types need to be seasoned regularly. Mineral B is shipped coated in beeswax to protect against rusting, but it needs to be stripped and seasoned before first use. Hope this helps.
